Bajra Kheer

- 1 cup Milk
- 1/2 cup Grated Jagger or as per taste
- 1 cup Bajra Flour
- 1/4 cup Finely chopped dry fruits(Cashews, Almonds and Pistachio)
- 1/3 cup Ghee
- 1 tsp Cardamom Powder
Place a kadai on stove, pour milk and let it come to a boil. Place another pan on other flame, add 1 tbsp of ghee, after this add the copped dry fruits(Cashews, Almonds and Pistachio) and roast them properly. Then take them to a plate. After milk gets a boil, make the flame to low and let it cook on low flame.
Now, In the same pan, add 1/2 tbsp of ghee and bajra flour into it. Roast it for about 3-4 minutes. After it get roasted, pour water gradually to make a lumps free slurry. After this, pour this slurry into boiled milk (which is getting boiled in another kadai) and mix it continuously on a medium flame to make it into a thick mixture.
After it gets thick, add grated jaggery into it, and let it boil. Mix it for about 5 minutes or till jaggery melts completely. After this, it will get thicken(just like condensed milk texture). Now add cardamom powder and roasted dry fruits into it.
Now the kheer is ready to serve. Take it into a serving plate and enjoy it hot as well as chilled.
