Foxtail Millet Coconut Rice
Foxtail millet is a tiny seed light-yellow in colour. These grains are not only rich in nutrients such as iron and calcium, they are also gluten-free, making them a suitable option for people with gluten sensitivity. The millet is high in dietary fiber, which can help support healthy digestion and may also help lower cholesterol levels leading to better cardiac health. Foxtail Millet Coconut Rice
Ingredients
- 1 cup soaked and boiled foxtail millets
- 1 cup freshly grated coconut
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 no dry red chili
- 2 no green chili
- 1/2 cup roasted peanuts
- 8-9 p1cs cashews
- 6-7 curry leaves
- 1 tsp turmeric powder
- 1 tbsp chopped coriander leaves
- salt as required
- 2 tbsp desi ghee or oil
Instructions
- Before starting cooking this recipe, take 1 cup of foxtail millets and wash it thoroughly with enough water.
- After cleaning the millets, soak this 1 cup of water into 3 cups of water(in 1:3 ratio) for about 6-7 hours. Then boil it with the same soaked water. It will take about 20 minutes to cook the millets with complete absorption of water. Take the cooked millets in to a separate bowl and let it cool.
- Now for preparing millet rice, take a cast iron kadai put it on to stove, pour 2 tbsp of ghee in to it.
- Now add mustard seeds, cumin seeds in to oil, and let them splutter.
- Now add dry red chilis, green chili, curry leaves, cashews in to the oil and let the cashews a little bit to roast.
- Now add salt as required, turmeric powder and roasted peanuts into it.
- Now add freshly grated coconut into it and let it cook for about 1-2 minutes.
- Then add soaked and boiled foxtail millets into it. Let it to cook for about 2 minutes.
- Now add chopped coriander leaves into it and mix it properly.
- Now foxtail millet coconut rice is ready to serve. switch off the flame and dish it out.
